The Academy is made up of 50% female voters and 50% male voters and is split into 26 separate regions around the world. Each region has its own voting panel of 40 members. The members in each region are made up of food writers and critics, chefs, restaurateurs and well-travelled gourmets, each of whom has 10 votes. They look for restaurants that serve haute cuisine – which is characterised by the meticulous preparation and careful presentation of food.

During the colder months, the restaurant acts as a sea-to-table restaurant, with a focus on the plumpest and juiciest fish from the Nordic oceans. A few months later, when the earth begins to grow green, vegetables take centre stage. In the autumn guests are treated to a cornucopia of mushrooms, berries and game.

Asador Etxebarri in Axpe, Spain
Asador Etxebarri in Axpe is a unique rural restaurant where everything on the menu is grilled to perfection. In some circles, he’s a god when it comes to grilling. He’s self-taught and has had a lifetime love affair with wood, which has earned him a Michelin star.
